Fees taken but not show on receipt

I booked a holiday with a booking company. There was also a 'gratuties' charge which I could pay up-front or at destination; I decided to pay it up-front with the holiday and I paid with a credit card. Subsqunetly they sent me a receipt but silly me did not check it carefully. They had put teh full amount on the receipt and did not itemise anything.
When I got to the destination they told me that they had noty received the gratuties payment from the booking agent; so I had to pay the the staff myself.
On return I sent several letters and emails to the booking but they never replied. Then I went to my bank and initiated a chargeback. The bank credited the amount to my account and said that the booking agent had 60 days to dispute it. As it turns out out they disputed (saying I never paid the amount) but only after 4 months and the bank relented and took the money away again.
1. The fact that they did not itemise the charges on the receipt its very difficult for me to prove that I had paid for the gratuties.
2. The fact that they did not dispute the chargeback within 60 days but after 4 months, can I get redress from the bank?

    They have 60 days from when their bank advises them of the chargeback. There is then the process of it going to their bank and then your bank for consideration. The extra 2 months are more likely processing backlogs in the banks than the merchant being allowed to respond late. 

    Are you positive the destination hadn't been paid the gratuities in advance? It's an old trick to claim they haven't been to double dip. Similarly subsequently for individual staff to say they dont see any of that centrally paid gratuity so can you leave something for them personally.
