iPhone 11 storage

I've recently switched from an iPhone 6s to an iPhone 11 and am having trouble with the storage. Both phones are 128gb storage. On the 6s I never had an issue with storage. It was consistently around 80gb, give or take 5gb, so I never reached capacity.

With the 11 I am constantly reaching capacity - it's system data that's the issue. I've worked through the troubleshooting I can find online, like clearing browsing data etc.
I have just checked the storage and the system data was up at 126gb again. I closed down open apps (about 6 of them) and then turned the phone off and turned it back on again which cleared the problem and it's now back at 35gb. I only did this same thing yesterday.

Can anyone explain why the system data is so high so often when I am barely using the phone, and I'm doing nothing different to what I did on the 6s?

Also, the 11 is glacially slow to charge!
