Probably can't - unless you were a guest of the Premier Inn and complain to them. Alway read signs and don't park in private car parks (sitting in the car is still 'parking' and ANPR will get your numberplate).
You could have parked literally anywhere on-street, even on double yellows - and never got a PCN. Always pull over at kerbsides on street. Not in car parks unless you read the signs.
Having said that, we are not advising that you pay £60 or £100.
Do one appeal saying the signs were not prominent, then ignore them unless you get a court claim. If you move house within 6 years you must tell them because that's the only danger (not seeing a court claim and failing to defend).
Unlikely to happen for a single PCN though.
To cover yourself and gather evidence I would advise going back on foot, taking lots of photos including at the entrance and dividing boundary between the Premier In and the Co-op petrol station, to demonstrate later in court (if needed) the lack of prominent, large-text warning signage.
If it was night, take your photos in darkness to best replicate the conditions.
When taking those pics, go into both the Co-op petrol station and the Premier Inn and ask if their Manager will please step in and cancel the PCN (do not hand over the original, obviously).
You may well find they hate the parking regime and will help if they can.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
