Today has been a NSD for me, practially unheard of for a Saturday:j I think it was because I never left the house. I was reviewing my spending yesterday and got a bit despondant as I couldnt see how I was going to stay in budget:mad: and thought how am I going to do this if I can't even manage the first month! Then I got a bit annoyed with myself as I have little to moan about really, I feel humbled when I read some peoples situations, thats not to belittle anyone but my outlook on life is that there is always someone else worse off than myself, so be appreciative and get on with it:T .
I killed dead things today and gutted the whole house out and feel so much better for it. I listed 20 items on ebay to try and get to the end of the month by playing catch up and made a lovely chicken stir fry with everything I already had in the house.
Thanks so much for all the recipes, I have learned how to save them all, at the start I was writing them all down by hand:eek:Live on a little over £4k challenge

I went into town today and headed straight for boots, all they had reduced were christmas cards!
So, hit the charity shops instead and book two great cookery books for £2, one is potato recipes the other pasta, and I really didn't know you could do so much with the simple spud!
I also located the local schoolwear shop and have joined their saving scheme as my eldest is starting school in August and I don't want to be skint when it's time to get a uniform for him, so feeling quite pleased with myself.Payment a day challenge: £236.69

I often make up veg soup with all frozen veggies if I haven't any fresh in, works fine so you shouldn't have a problem. Its a good way to use up all the little portions left in bags at the bottom of the freezer. We call it bottom of the bag soup:D0 -
Hi Penny!
I make a cream of veg soup regularily, it changes a little according to what I have in but basically it is:
1 lb veg (any or all of these will do - potatoes, carrots, onions, leeks, swede, sweet potato, parsnip etc)
1.5 pints stock
seasoning
knob bujtter
little milk
Peel and chop vegetables and put into a pan with the stock. simmer until soft and blend until smooth. Put back into pan and add a knob of butter and heat through, stirring, add milk and season to taste. this is our favourite way to use up vegetables from the organic veg box. Easy and cheap! hth
this soup sounds yummy and so easy to make. i think i will give it a go sometime this week, we are on a very tight budget for the next couple of weeks, some how i have gone in to my ODand my CC, water and elec bills are due in soon.
Back on MSE again! to take control of my finances and not let it control me. :T May grocery challenge £41.96/1400 -
Good grief...another £44.82 gone today. Most of it was due to be spent, but a few pounds were wasted.
