Why am I being subscribed to every post I reply to?

I've just noticed I'm being subscribed to every thread I make a reply to... Though it looks like its been happening for months now judging from the number I'm subscribed to! Is there any way I can stop this happening? I went through my control panel but can't seem to find anything to fix this!

I presume you don't want to be informed of every reply? If I'm right then go to your "User CP" and under the "Control Panel" heading you should see the heading "Settings & Options".
Underneath this is the link "Edit Options" click it and a page should load up with "Edit Options: (your username)". In the second column under " Messaging & Notification" you should see:

"When you post a new thread, or reply to a topic, you can choose to automatically add that thread to your list of subscribed threads, with the option to receive email notification of new replies to that thread"

and:

Default Thread Subscription Mode: (drop down box) At this point choose the option you desire!

This should sort it.

I didn't want to subcribe at all, so have sorted that problem now

Its often better to subscribe with "no email notification" rather than not subscribing at all.

Setting it to subscribe with "no email notification" means that you won't be bothered with emails but threads you subscribe to will be but on your subscription list - which is an excellent way to see which of the threads you've posted on have been replied to most recently.
