Claiming from Easy Jet - flight cancellation. Hotel and other costs

Hello lovely people,
I'm sure there are a myriad of posts on this issue, and I'll start to look at some once I'm home, but am hoping in the meantime for some quick and easy direction.
I'm in Spain, I was just notified by Easy Jet that my return flight tomorrow has been cancelled. I've rebooked a flight for Monday (next available, means two extra nights), and they've assured me over the phone that they'll compensate me for up to three star hotel for the extra nights that I'm in Spain, plus meal costs and extra transport.
I've booked a three star hotel for Sat and Sun, and will keep all receipts, of course.
From experience, is there a best route to ensure that they actually pay up? I'm OK fronting stuff on my CC, and won't take the pee by splashing out like a crazy, but their process so far has been labyrinthine, and I guess I'm looking for the surest and swiftest route to ensure that they reimburse me for my extra costs.
I'm not complaining - two more days in the sun ain't bad, but I'd be spending next to nothing at home, and want to be sure that they'll honour their obligations.

Depending on the reason for the cancellation, you may also be entitled to compensation, claim form for that is here: https://www.easyjet.com/en/claim/EU261
If you did want/need to be home before Monday you’d have been entitled to book a flight with a different airline and claim the cost of that from easyJet. Academic now as you’ve rebooked but good to know for next time.1 -
Thanks @bagand96 - I've been a bit rushed this evening, so to have that info to hand is really helpful - their helpline was pretty awful and I've just focused on sorting the new flight and hotel.

I'm quite relaxed about the extra time really, I like it here and my work (I'm due to start Monday!) are super relaxed about me starting on Tuesday instead. I just want to get things straight to make the compensation as swift as possible.
They've not given a reason for the cancellation - just "We’re really sorry that your easyJet flight 6054 from AGP to BRS on 29-10-2022 has been cancelled..."0 -
Other tip would be to make sure you obtain and keep receipts for all expenditure. I don’t think they like just claims with just a credit card statement.

We had clients in our house in Cyprus who had similar, but not till they were at the airport!!!They came back to stay one extra nightI had to provide an invoice with all the guests names on it for EJ to cough up.Full request was:-Hotel nameName of guestsNumber of roomsNumber of nightsDate of arrival and departurePrice of room

Happy update time: They've approved my hotel and meals claims for the extra two days I "endured" in Spain, in addition to £350 compensation for the flight being cancelled. Thanks for your swift and helpful pointers, all5
