advice needed re franchise

hi i work in a cafe the owner had several at one stage but has now franchised them all, ours is the last to be franchised, my manager has decided that she would like to take the cafe on. i would like some peoples opinions on this i think its a really bad move, obviousley i dont have all the details yet but here are some of the figures, the owner wants £35000 for the franchise then 9% of profits not sure if thats per year.
the cafe takes on average £370 a day over six days
the rent for the shop is £500 per month (does the owner pay this or the franchisse?)
there are three members of staff on every day 2 full time one part time min wage manager and deputy manager are on slightly more.
business rates i dont know how much these are but who would pay them
also the same question for other utillity bills
im asking about the bills becouse the current owner dosent like to pay them
we have had ballifs round many times.
i guess im asking for advice becouse i know this guy is dodgey and i dont want my manager who is now a close friend to be ripped off or to be left with a business that she cant afford.
