I have a panasonic (KX-TGC310EB) cordless phone. In Jan it will have to be connected through my wi fi hub. I need an extra phone for upstairs but can’t find any additional handsets for this model, so I think they must have been discontinued. If I buy a second phone (same model--still available) and plug the charging base in a mains socket upstairs , will this second phone work by connecting wirelessly with the first or is it more complicated than that?

You should find that any DECT handset will work fine once you've paired it to the base station. Buying one specifically for that model just means you'll get to use ancillary functions like handset to handset memos and shared phonebooks and other stuff like that.

Just be careful with these, we had one and put it near but next to our router and it killed our WiFi signal and speeds and it took me a week to figure it out.0

The cordless phone handset and the base station will still communicate with each other using a wireless radio frequency, which is what can cause the interference with the radio signals that your router outputs to give you WiFi signal. How the base station is connected and communicates isn't important really, it's the frequency between the handset and the base station that can cause problems.
I couldn't solve the issue, so I ditched the cordless phone as we never use the landline anyway. Most handsets are fine, but it is a 'known' potential issue if the base station is near to the router. It's an odd one though as they do use different frequencies.1
