    I would think You need a structural engineer, to start with.

    my house is 250 years old and we had a level 3 survey. It had also had a structural engineer take a look a few months prior and the surveyor just referred to the structural engineers report with regards to structural stuff, which included the roof.

    you could get a builder in to take a look for an overview?

It may be that something was cut that shouldn't have been, but it may not have been very significant and a bolt may have been aanentirely appropriate repair. If you are concerned, then getting a general builder or roofer to inspect and let you know of there are any issues would probably be sensible, but maybe go up youself first , if you can,  and see if you can spot it and perhaps take photos.

    How long ago was it and have you been aware of any issues since?

    I didn't imagine that they told us they'd sawed through a beam.

    I wasn't in a position to question it then. I'm not able to physically get up there, but I'll ask friends if they can look.
