If OP had a problem, they could have equally presumably booked a ticket there and then.
Most border points in the world dont allow use of mobile phones and so you'd need to be dealing with a security agent thats willing to turn a blind eye to you getting your phone out and booking. Given the agent has already pulled you up on one of the rarer enforced requirements they probably arent the turn a blind eye type.

Really? I have never had problems showing information as required on my phone in any country.

I possibly agree on the second part though,  as 99% of people are not asked anything more than the basic requirements for entry, hence it may or may not have worked.
So if you look at https://www.standard.co.uk/news/uk/heathrow-airport-queues-baggage-claim-chaos-covid-b953860.html  it has the photo from Heathrow that states phones must be away when with the Officer... historically you werent allowed them at all

Once again, in practice, immigration officers have never had a problem with me showing documentation on my phone as required, including last night when I was asked a question. This was in the UK.

I can understand calls and cameras, however showing documentation that has been requested shouldn't be a problem. This was business travel and we run a paperless business. Therefore in the interests of the environment, data security and accountability to clients do not routinely have documentation in a non-electronic form.

The photo you reference states 'Please put your phone away when speaking with an officer'. That is a request, not a requirement. It is, however, good manners to have the screen turned off unless there is a reason not to and despite my phone being in my hand when passing immigration (I spoke with immigration of 4 countries yesterday, 3 of those by land borders, this was always the case), the screen was turned off.

Going around in circles a little here... certainly in some countries, at least in the past, wording was much stronger but ultimately its down to the officer you are dealing with. If you get a pain in the !!!!!! officer they are likely to say that you cannot have your phone out and therefore the plan of "I wont buy a return ticket but if the immigration officer demands to see one I will take my phone out and buy it there and then" is a strategy with risks.
