Our fussy rescue wasn’t keen on most cat food.  She would lick it and eat the gravy / jelly but leave the chunks.  As a non meat eater I was also struggling with the smell.  We found that would eat up applause senior (which is basically just mushed up fish).  We became concerned that she wasn’t getting all the nutrients she needed on a high fish diet though so have transitioned her onto wainwrights pouches (which she will now eat as long as we mush it up for her with a fork).  It did involve a few largely uneaten meals but now she is used to it she is happy.  Perhaps you could try transitioning them gradually onto cheaper cat food via the more expensive ones?  The applause really is very like human food (I haven’t eaten meat for many years so may not be the best judge!) so could be a way to get them started and then you can gradually go cheaper.

For litter, we found clumping worked out cheaper as you don’t have to replace all of it each week but can just top up.  We were using pets at home’s own brand which worked fine and was very affordable but have switched to catsan which is less dusty as our cat has asthma.

I don’t add taurine, pretty simple to do if you wanted to though I do occasionally buy heart and add that in to his diet , which he loves, and is surprisingly not messy!
