Hi need some advice on where and what hotel to stay in for our family trip.
The plan is:
Sat - travel from West Midlands and explore central London
Sun - explore central London and then do Harry Potter studio tour in evening
Mon - go Chessington World of Adventures
2 adults, 2 children,
Don’t know whether to stay near Central London, near HP studio or Chessington.
Any advice much appreciated.

Far as I know, Harry Potter is centrally located. If you are exploring central London on 2 days and the HP tour, central would make sense. Then you just have to travel to Chessington.
I've only been to London a handful of times, but the bus/underground system is fairly easy to fathom, and if you are using public transport might be worth getting a travel card of some sort - if I remember rightly we bought an oyster card one year. Under 11's are free on buses, underground and over-ground, but not on trains.
If you aren't familiar with the public transport in London, it's worth having a read up. A few years ago when we went to London we stayed near Waterloo, and I got caught out after accidently buying a train ticket for the underground cos I went in through the wrong entrance. They didn't fine me fortunately0 -

It would appear to be near Watford Junction, although Wikipedia claims it's in south east London!

Just some ideas from someone who has traveled to London a fair few times (also from West Mids)
Given that neither Harry Potter Studios or Chessington Adventures are in central London I would be inclined to amend your itinerary to something more like:
Saturday - Harry Potter Studio tour. Go into central London for the evening.
Sunday - explore central London - this could mean a lot of things! Research what interests you and don't try to do everything. The tube will help you get around to a lot of sights (you can use a contactless card to tap in and out of the tube which is very easy, may be worth getting a travel card if travelling as a family/with kids (please do your own research on this!)
Monday - Chessington Adventures
You don't say if you will be travelling by car or train which will make a difference to how feasible this all is and how much time it will take to get around

I would be inclined to stay somewhere central London for ease of exploration on the Sunday OR somewhere a bit south with good connections/route to Chessington to give you ample time to explore that on the Monday.

You really don't want to be bringing a car into central London, if that is your plan. On those days you will be subject to both the Congestion Charge and possibly the ULEZ charge, unless your vehicle is compliant. Not to mention the difficulty of finding parking.
Watford Jn is reachable by tube or train, from Euston, but for Chessington you must get a train from Waterloo.
Neither venue is in Greater London.No free lunch, and no free laptop0 -
