    Also the wires look jumbled and complicated?

    Not really - ignore the stuff at the back of the box. you don't need to get involved with that

    Look at the back of the dimmers - 1 wire is  connected (commoned) to all 3 dimmers , the other single wire from each dimmer goes off to each of the 3 lamps

    So you just need to duplicate the wiring as it is now but into the switches rather than the dimmers

    I’ve taken a picture of the Back of my light switch
    The CPC (circuit protective conductor) is not connected to the Earth terminal of that Class I accessory. This is potentially hazardous.

    Brass earth terminal on the switch - connect it to the earth wires.
