Not sure what is going on with the beet root. We went away just before the heat wave and on return found them to be like this.
It's been a few weeks and looks like it is getting worse. I feel it's got nothing to do with the heat wave.

Grown in raised garden bed
Soil and compost mixed
Watered well

I would hazzard a guess that it's a problem with mineral depletion due to trying to expand the fruit when it has little water to dissolve the nutrients it needs.

    Thanks @twopenny
Will add some bone mineral, I feel it's too late for this crop.

I'm having a similar problem with some plants.
Leaves showing the stress the plants are under and they are not liking the chemical enhanced tap water when it's direct to their roots. But nothing else in this drought.
As it's a smallish bed can you have 2buckets/watering cans. One to stand for a day to let the chamicals evaporate and other cleared to water?

Other than Chlorine, not sure if there is anything else which will evaporate out.
It is possible, my lovely neighbour (very grateful to them) was watering them well. 🙈
