Is it possible to be tracked without knowing it on you're phone Or for someone to see photos you are taking? How can you check if an ex knows where your location is or the photos you're taking or your messages? can someone have the login for your gmail account to get this info? What can you do to prevent this?

Yes to all in the right circumstances. What to do about it:
Do a factory reset of the phone and set it up again so you can be sure there are no tracking apps installed.
Make sure that you are not sharing your location through of the services from your phone OS provider
Change any passwords to accounts like Google for mail / photo's and any other social media or backup / sharing apps to ensure they no longer have access to those accounts.2 -
You can see which devices are using your Google account. Go to Manage your account, select Security and under there you will see the devices that are logged in. I don;t think someone can track your Google account without the account holder being aware.1

If we're talking a "normal" person, then they've been in physical possession of the phone at some point then they may have installed something on there - this is somewhat unlikely, but possible. You'd need ot either identify the app and remove it, or do a full wipe (factory reset) as 400ixl says. If we're talking MI5/GCHQ - then they can hack into your phone remotely without you noticing and install all manner of spyware that you'll never find. Just assume the security services can find you any time they want.1 -

1. turn location services 'on' on the phone (normally on anyway)
2. log into the Google account on eg a laptop, go to 'data and privacy', then 'location history' and all movements of the phone will be visible on a map day by day. There is a slider switch to turn this feature off.0 -
Most of us are being tracked all the time - Mobile phone - Debit/Credit/Store cards/ANPR/CCTV and facial recognition - and we have all signed up to it.1

My location history is turned off I believe. However, when I went to 'find my phone' or something I could find the location, and the location of all five devices my gmail account is logged in to. Strange that I have five. Is that the extra sim in one of my phones with two sims? SM-A202F- that's not a phone is it? Maybe I should just change the password. Nice to know I can find where any of my lost phones may be though.
