I'd suggest she emails her customers to explain that she would prefer card/bank transfer payments. Realistically all her customers will have debit cards. She would need to sign up for one of the many processors e.g. Sumup/zettle first.

Any who struggle with that, Starling allow you to pay cheques into business accounts free of charge by photographing them in the app.

Unfortunately a lot of people assume small businesses would prefer cash to avoid tax and don't realise that for those who do things properly it actually isn't at all convenient!
