Drive holiday into Europe - vaccination advice needed

Please can someone advise if I wanted to drive from uk (Dover) to France and Spain what vaccinations are needed. Just soo confused with all the different regulations.

On first reading I suspect that the adult with only one vaccination may have problems
With no vaccination at all the 16 year old doesn't meet the requirements.
The under 12 year old needs nothing at all.1 -
Spain has the same restrictions so depending on how long you take to get to Spain you need to check the times for the requires covid tests.
Spain also requires the car to be registered.
