Unless the plaster is already had it and starts falling of in big chunks the is no need to replaster entire walls or rooms, Just some quality time with a sanding block and filling knife.1

Option one but consider wall mounted TVs under counter appliances, bedside lights etc etc2

of course select option one or you will be angry about the electric appliances trouble

Another vote for option 1 if at all possible but you’ll need to do some detailed planning re position of power sockets, switches etc
A possible complication could be availability of tradesmen precisely when you want them, which could mean staying in rented/with family longer than you would like.You could try sounding some out re their availability if you have an idea of completion date. Obviously that could slip though!1
