    Unless the plaster is already had it and starts falling of in big chunks the is no need to replaster entire walls or rooms, Just some quality time with a sanding block and filling knife.

    Option one but consider wall mounted TVs under counter appliances, bedside lights etc etc
  • of course select option one or you will be angry about the electric appliances trouble

    Another vote for option 1 if at all possible but you’ll need to do some detailed planning re position of power sockets, switches etc

    A possible complication could be availability of tradesmen precisely when you want them, which could mean staying in rented/with family longer than you would like. 

    You could try sounding some out re their availability if you have an idea of completion date. Obviously that could slip though!
