I would not be screeding under units unless it was being done at the same time that I was ripping the kitchen out anyway I think - I suspect it would cause more problems than it would solve otherwise. It's likely that as and when the kitchen is done you'll be getting new flooring in there anyway I should think, so any discrepancies in floor level can be sorted at that stage?
The boxes thing - honestly, I'm well aware that we're far from the normal on this one!
