What happens if I want to cancel my subscription - do I lose access to stuff I've bought and only get to watch those - or do I lose everything?

If you "buy" films/TV on Amazon then you have bought the right to view them for as long as Amazon says you can.
If you cancel/lapse your Prime subscription then you will retain access.
If you cancel your Amazon account then you will lose access.2 -
