Court Claim received for overstay of 17 mins in McDonalds, UKPC and QDR Solicitors involved

Hi,
1st post and new to the forum, so bare with me, Im trying my best.
I am preparing to defend against a PCN received for an alleged incident in 2019. It was a 17 min overstay in a McDonalds while being a paying customer.
Ignored the previous letters as I thought they were a scam. 
I did the AOS online on the 6th day I believe (site was down). Ive applied for a SARS from UKPC, trying to write an email to QDR to notify them of the situation but cant find a template, is the wording in that important?
After this I'll be downloading the defence template and adjusting it to my situation. Any recommendations of previous cases to look at or any more links apart from what ive seen on the stickies on here?
Any help is appreciated.

    What is the Issue Date on your County Court Claim Form?

    Upon what date did you file an Acknowledgment of Service?
    Your MCOL Claim History will have the definitive answer to that.

    Claim issue date was 13.05.22
    AOS was 20.05.22 and it was before 4pm

    With a Claim Issue Date of 13th May, and having filed an Acknowledgment of Service in a timely manner, you have until 4pm on Wednesday 15th June 2022 to file your Defence.

    That's over three weeks away. Plenty of time to produce a Defence, but please don't leave it to the last minute.
    To create a Defence, and then file a Defence by email, look at the second post in the NEWBIES thread.
    Don't miss the deadline for filing a Defence.

    Do not try and file a Defence via the MoneyClaimOnline website. Once an Acknowledgment of Service has been filed, the MCOL website should be treated as 'read only'.

    Thanks for the information KeithP, what's the thinking behind only using MCOL as read only from now? Is the other alternative via post?

    I have just received the SAR request back from PCUK. 
    Photos of the vehicle entering and leaving, with timestamps, NTK and final reminder.
    Nothing of the other letters

    Bargepole's 'what happens when' post linked from the second post of the NEWBIES thread explains why filing a Defence via the MCOL website is not a good idea.
