Euonymus comes in different shades- green & cream, green & gold and would possibly grow there. Emerald Gaiety  has pink tinged leaves. It has a strange habit- in open ground it is a bush, if given a wall / netting it will grow up the wall if supported. I had it about 12ft up wall (until attacked by scale insect!) for years and no damp. Evergreen, has white flowers and small berries.
    Escallonia?

    These are evergreen

I vote for the herbs - rosemary is lovely in the spring and obviously marvellous with lamb.  Fill in the corners with thyme, maybe the creeping type.

I have euphorbia in the front and love it.   If OP cuts out the flowered stems (wear gardening gloves) I think it would look fine.  I’m not sure, but I think maybe the flowered stems weren’t cut down in the past and that’s why it looks so straggly.  It only flowers on new stems.
