Depending on how sound the original plaster it, you may get away with just a skim. A plasterer and mate can do an average room a day at a leisurely pace so expect to pay around £400 - £600 per room.

If the plaster has blown, it's a good opportunity to add some insulation but nobody's going to know if you don't do it.

As mentioned above, have a think about whether you need a rewire or any extra sockets adding - it's best to do any destructive work before re-plastering.

Also, if you're doing a full on renovation, it's a good time to learn some new skills. I picked up plastering about 10 years ago and can now skim a wall to a decent finish, board and skim etc and have saved myself a fortune. The tools that have become available over the last few years have made it much easier too. When I started, I was using a marshalltown steel trowel which was fine but quite hard work. I've since moved to a Nela finishing trowel and speedskim and can now work much faster.

You may be surprised if you start with some paper. My last house was 1920s and the plaster as good as new. Just one corner, one room was chipped and a few hailine cracks to fill.
I also stripped a room in a rented victorian terrace. The plaster  had crumbled in one corner. Easy to fill.
But agree that this is the time to check the wiring. Make good and get a top, smooth layer of plaster on those walls.

I can rise and shine - just not at the same time!
