Hi All,
I didn't know where to post this in this forum so I thought this may be the better place for it.
I recently acquired a nice tasting curd and have previously made non-GF curd loaf / muffins.
I was wondering if anyone has a nice recipe for gluten free curd loaf or muffins.
Thanks in advanced.

Is the curd going in the cake batter or will it be injected into the baked product? I ask because the sharpness and taste of a good curd is likely to be lost in the former. No man is worth crawling on this earth.

Do you recommend injecting instead?
Do you have a recipe for both or either?
Thanks.1 -

Rosa_Damascena said:Yes to injecting and no to a specific recipe - have made it before based on standard sponge mixture but used my own instinct to substitute the curd in for parts of the egg and sugar quantities - but I'm interested to see what other OSers come up with.
Could I have your standard sponge mixture recipe if you don't mind?
I may try it and just inject the curd.0 -

@Rosa_Damascena @givlon01
After looking around some, I have found a recipe for gluten free cupcakes with merangue frosting, but more importantly with a curd filling.
I haven't tried it yet, but I thought I would post it here, if you were interested to try it.
I guess we can always skip the merangue and just make the cupcake, instead of a loaf.
If you do, please let us know how they turned out!

PS. Still looking for a recipe where the curd is actually mixed within the loaf. Will come back if I find one!.0 -
You could try having a browse around this site Freee | Gluten Free Products and Recipes (freee-foods.co.uk)
The other site that might be helpful is Nigella Lawson's, I certainly remember her mixing curd into tart fillings fairly recently and you can ask questions there too.1 -
As @Rosa_Damascena says I make free basic sponge using all same weight ingredients as the eggs, just substitute flour for gfree flour ,and baking powder. Never tried with lemon curd in batter. Just used as a filing layer once.Focus on contribution instead of the impressiveness of consumption to see the true beauty in people.1
