I'm not good with this stuff so here's my question.  I am off into hospital for a few days and there's no mobile signal to be had there.  But there is wi-fi, apparently.  Does this mean that my wife and I should still be able to communicate via gmail email?

You don't say what device (mobile phone presumably?) but normally yes is the answer.
You could also consider WhatsApp which can be used to make calls as well

In theory, yes.  Assuming you can get a good signal at your bed.
It used to be many years ago mobile phones and what not were effectively banned at hospitals as they interfered with the equipment, but if they're providing guest Wi-Fi, clearly that's not a concern any longer.

Thank you.  Yes, on my smartphone.  Thank you very much.  That's a relief ...

Make sure you enable 2FA on gmail

GM used to give me loads of false 'critical security alert' warnings till I did this, but works fine now.

    Would wifi calling work?
That would depend on the hospital network and whether they restrict it. Impossible to say without knowing the details of the hospital network.

If its available on their phone its simple enough for the op to try, simply switch it and see if it works.
