Had a new fireplace done and the plaster has been done a week but has gone a strange colour should I be concerned - feels dry and smooth when I touch it

it's not fully dry yet. nothing to worry about.
once it's fully dry it will all be the same colour2 -
Most likely as Fen says. Do the darker patches become smaller each day? (Mark edge with a pencil if in doubt!)
Or, do the darker patches feel 'glazed' - super-smooth and hard? Sometimes plasterers can polish the surface too much and it goes hard and shiny (matron!). If so, paint can actually struggle to adhere, so it's best to key the surface slightly with, say, 180 grit. Just lightly, to remove the shine.
But see if the areas recede first.2
