You could buy the special keys to remove your head unit (£6.19) 

 https://www.amazon.co.uk/dp/B07Y279C4M/ref=cm_sw_em_r_mt_dp_U_Hl6WEbJH5NQ68 for about £6 and see if you are able to do it yourself. If so you could buy an upgrade unit adapted to fit directly into your car, such as this one:

eBay have original Skoda units from breakers yards for about £40 but see born_again's warning above

Otherwise plenty of auto electricians around to fit an upgrade for you. Even Halfords will do it but they may not be the cheapest or the best.

An advantage of using a local guy is that he can fit a wider range of models and even add extra hardware such as more cameras or radio sources.

I would advise speaking to those on the Skoda forums first.
Headunits can be complex in modern cars with the features they integrate with in the car.
Get advice on potential problem and solutions before replacing HU etc would be my advice

Has the OP got another quote from another Skoda dealer?  £6k for the stereo is absurd - 3 stereos =  whole car!

Could the quote have been a typo for £587.60?

I was thinking the same…nearly 6k just seems wrong
