Shutdown, Sleep or Hibernation

I have 5 PCs and two QNAP nasbox servers in my home (most of these are used for work purposes). In this day and age of trying to reduce electricity usage I'm just wondering what the best options are for these machines?
A couple of the PCs use SSDs, but the others are all bog-standard HDDs, some of which are RAIDed. But there's no activity going on between the hours of 1am and 8am for all but one of the machines.
I'n always wary of shutting down and rebooting machines. Yes, it saves on energy, but constant rebooting might put too much stress of the drives.
I know the difference between Sleep and Hibernation modes, but I don't know which is more energy efficient in terms of KWh used.
I'm inclined to go with Hibernation mode for all, but I just wondered what others thought.
Thanks

You say **most of these are used for work purposes** are you not running some sort of backup?
