As I keep saying, you cannot force them to provide a reference. If, as a matter of policy, they only provide "bare bones" references (dates employed) then that solves your issue of them saying things you don't want them to.
Obviously nothing can stop the grape vine, an informal word on the phone to somebody in the company, etc.
