Vans with no windows in the back are physically more secure and the naughty folk cant see what's inside, I owned a van and insured it privately but had trouble transferring my no claims bonus earned on the van to the car I purchased after selling the van as it was a commercial policy. Van tyres tend to be more expensive as they have more ply cords as they take greater loads, watch out for car tyres fitted to second hand vans as it may compromise your insurance and be dangerous due to load under rating.

I want the flexibility of being able to pick stuff up I see on my travels.

Is this a thing? The only folks I'm aware of doing this are from a protected minority group not to be encouraged.

Is picking up 'rubbish' discarded publicly a bad thing? No. The amount of good timber chucked out is ridiculous. I fix broken discarded items and make furniture from timber.
    I hate waste.

Have you considered an MPV style van, such as a VW Caddy C20 Life, Peugeot Partner, Citroen Berlingo, Ford Torneo Connect, or even a Skoda Yeti.
I loved my Yeti, but even in van mode it's still pretty small. You could get a chest of drawers in but no wardrobes
