Travel advice for unvaccinated teenagers

Has anyone here recently travelled overseas with unvaccinated teenagers from Scotland? We’re due to head to the Canaries shortly- both teenagers had vaccine 1, but they got covid just before vaccine 2 was due. I know that they could travel with a private PCR test, the cheapest I can find is £110 for 2 - but I’m worried they will fail them because their covid was so recent. I called the NHS Scotland vaccination helpline to get proof of the first jab and ask for a recovery certificate, but was told they don’t issue Recovery Certs for under 18s and I should just print out the NHS email that said they had a positive PCR - but that doesn’t look very official to me. Online companies are offering Covid Recovery Certificates for £160 for two but I don’t know if they will be accepted in Tenerife. Has anyone else travelled with teenagers recently in this situation? Either test is expensive when I was planning on them both just being fully vaccinated, but we can’t do the PCR until 72hrs before we fly anyway so we’d be leaving it too late to cancel. Not quite sure what to do!

NHS COVID Pass digital service for international travel
From 3 February, children aged 12 and over can get a digital NHS COVID Pass for international travel.
A digital NHS COVID Pass will:
provide a record of COVID-19 vaccinations received
- show evidence of recovery for 180 days following a positive NHS PCR test

Thanks but unfortunately that’s only for England. Frustratingly, Scottish teenagers can’t access their covid status through the NHS Scotland App system - we have to phone the NHS Inform helpline to be sent paper records - and they’re the ones who’ve also said they can’t issue pdf recovery certificates for under 18s. It’s really rubbish. Our schools didn’t even offer 1st vaccinations until mid-Dec, at which point some areas in England were offering 2nd vaccines to teens. Whilst I love Scotland, some things are terribly slow…0

We're due to fly in a few weeks and number 1 child has only had 1 vaccine and we are struggling to get a Covid Recovery Certificate.0
