I am just a little confused as to why my French buyers are charged VAT when I am not VAT registered.

Because since Brexit anything under £135 the seller has to charge UK VAT if sending into the UK unless its sold via a market place (eg eBay, Amazon etc) in which case its the marketplace that is obliged to do it.
You being VAT registered or not is irrelevant, everyone has to pay VAT on what they buy.
