There are plenty of investment choices onshore, so why complicate things by going offshore.
Or do you mean investing in the UK or investing globally, in which case invest in the global markets.1 -

Please correct me if I am wrong - the age 25 is not enforceable - once the the recipient reaches 18 he/she can claim the inheritance.
Edit - the recipient I think is 19 - so can claim the inheritance now.
