If I use the Facebook View As Public option (How can I see what my profile looks like to people on Facebook who I'm not friends with? | Facebook Help Centre), then the latest post that appears is dated 2015 and photos posted after this date do not appear.  It is like a time machine has taken me back to 2015.  Any ideas what the problem could be?

Well if you haven't set anything as public after 2015 there won't be anything to show in public.

Anybody who sets their Facebook up properly will not have anything "public" anyway aside from things like "Fred changed his cover/profile picture" which are generated automatically.
