The only gluten free mince pies in Mand S today were dated best before tomorrow! When I asked if there were any. Mushroom Roast
225gm mature Cheddar cheese grated
225gm Mushrooms finely chopped
1 large onion finely chopped
175gm breadcrumbs
1 egg beaten
Mixed herbs
40gm margarine
Salt & pepperPre-heat oven to Gas 3, 170°C, 325°F
Fry the mushrooms and onions until soft then leave to cool slightly.Mix the breadcrumbs, cheese, and herbs together.
Add the mushrooms and the onions with the beaten egg. Mix well.
Spoon into a well-greased dish or foil dishes or a loaf tin lined with parchment (to make it easy to turn out) and bake until golden brown, about 25-30 minutes.
Serve hot or cold, (I also slice it and use it in a sandwich) It's very tasty!!
It freezes well too.

In Aldi this morning the standard mince pies were slightly reduced. Why? BBE 14th December!!Being polite and pleasant doesn't cost anything!

I usually make mushroom stroganoff when I've got an excess of mushrooms. If you leave the mushrooms chunky then it actually tastes quite "meaty".

Big one-pot mushroom meals: I make a mushroom ragout topped with mash, that freezes really well. I also make a mushroom couscous dish which is super-simple, then stir feta / salad cheese through it before freezing.No man is worth crawling on this earth.

On the very important topic of mince pies, I saw a video at the weekend of a woman who uses the empty cereal wrappers to roll out the pastry, as it doesn't stick. She also cuts out long strips from empty cereal packets, and lays the strips across the baking trays before putting the pastry cases in, putting the filling in, and adding the top. Place the whole thing in the freezer for half an hour, and then a gentle tug of the plastic strip sees the mince pies pop right out. Then you can store them in tupperware tubs in the freezer until you are ready to bake them. I thought that was great. You can just bake as many as you want, when you want them then
