If the wrong product was delivered why did the fitter go ahead and use it?
They should have stopped work and came back once you have the right stuff.
That way at least you wouldn't be paying installation and for it to be removed again.
Yes they would still be paying the fitter though - the fitter will bill them for the day’s work regardless as they won’t have been able to do something else at that short notice.

Yes, but they wouldn't then need to pay the fitter again to take up the floor.

I'm under the impression the current costs are
    Fitting of wrong floor
    removal of new floor
    Fitting of new floor.

    When it could have been
First day finding wrong materials delivered
    Fitting of new floor.

How would the fitter know it was the wrong floor? He was just employed to lay a floor.

OP states there was issues 2-3 hours into fitting so someone noticed it wasn’t right.

From the sound of it:   The flooring company offer the same floor style with more than one locking system (or they changed the locking system and had stock with both formats).  A cursory glance wouldn't reveal the difference (same colour, same finish), it wouldn't be until you came to fit them then you'd notice the difference - and if you didn't suspect this might be an issue you might just assume that you suddenly couldn't get this next box of tiles to fit because you were doing something wrong.
