Google Pay funding options

I'm just starting out using Google Pay and trying to understand how this works as in what information is passed to the retailer I am paying.
Lidl do not take American Express but if I add an American Express card to my Google Pay account can I pay Lidl funded by the American Express card.
I think Google Pay creates a temporary card number (possibly a valid American Express number) and uses that to pay Lidl, all I can see is the last 4 digits of the card number so I can't tell if it is American Express or not.
I guess I could just try it and see if Lidl accept it.

I’ve used mine there quite a few times.I remember when they started I got a an offer of £5 statement credit back in April and May 2019 for spending £20 in Lidl.So where have you got this notion that they don’t accept Amex from?Time is a path from the past to the future and back again. My local Lidl (Northern Ireland) didn't take it about a week ago.Maybe there was something wrong, all I know is I tried my card it 'it wouldn't go through'0

Case in point - one can pay at McDonalds with a physical Amex using contactless, or using a Mastercard or Visa via Google Pay, but they can't accept a tap from an Amex via Google Pay.
