someone has used my sainsburys credit card on a paypal which was not my paypal account to purchase goods for over £1000 and sainsburys say i have to pay can apply section 75

No, Section 75 does not apply. 

Have you disputed the transactions as fraudulent?
Have you reported the fraud to Action Fraud?

What normally happens is once you dispute the transactions an investigation is started and whilst that is ongoing the fraudulent portion of the balance is frozen.

Bit more information needed 

Someone who's known to you who has used your card without your permission ? In which case you need to pay and chase them for the money

or

Someone unknown to you who had no way of accessing your card details in which case you report it as fraudulent and, assuming they can't prove your involvement, you're likely to get your money back

As above. If it was not you then it's fraud.
