Remove part of chimney, what steps to follow/building regs/sign off

I live in a two storey house. In my kitchen(ground floor) I have a fire place. From floor to halfway to ceiling it’s already open. I would like the rest to ceiling taken/broken off to have a floor to ceiling storage space. I am planning to now have a new kitchen done but need this space sorted out before the refit. 

I know I need structural engineer to calculate support for rest of chimney which runs through first floor to out and over the roof. 
All I know so far is 
1. have structural engineer calculate structural beam?
2. builder follows specifications to do the works?
3. ?
4. ?
My question is what other paperwork/sign offs, do I need to do which I will need when selling my house in future? What do I need so as to satisfy buyers down the line, make sure all is safe?

    Get it signed off by Building Control. Either LA or private.

    Thank you @stuart45, is there a way of checking if the sign off is authentic? Are the people/officers on a register for me to check? Afraid of just getting fake paperwork 🤷‍♀️

    If you ring building control at the council they will explain what you need.

    But... Get Building Control involved before you start the work - You can still get builders in to quote beforehand. The fees will be lower than trying to get retrospective certificates. Don't be swayed by any "builder" telling you that building control or building regulations are not required.

    Thank you @FreeBear, a builder has come in this morning. I told him that I need everything done with the necessary sign offs. He said structural engineer can come in do the calculations. He said, he will then do the work, structural engineer will come in and sign off. I asked him is it’s not someone else who signs off he said no structural engineer. 🤷‍♀️ Is this correct or am my already being mislead?

    The SE may well come back to check that any support has been installed correctly, but I've not heard of one that can supply the BR sign-off. It may be that the local Building Control dept works closely with this particular SE and will accept photographic evidence for minor jobs.
