Brilliant start @Ellie79! I like the way your Mum books your freezer space!
I tried one of the oat and date pots for lunch and wasn't inspired. Oh dear, I think there are five to finish up! However, DH has accepted salad for the second day running, so we could be on to a breakthrough. It seemed a bit of a strange thing to put with toad in the hole, but I added some roast red pepper and red onion, and put thyme and mustard in the 'toad' batter, so there was a sort of continuity of flavours in a very general sort of way.
Dh has finished the smoked salmon for lunch so there's a bit more fridge space where that and the red pepper were.I think a bit of sunshine is good for frugal living. (Cranky40)

@Cherryfudge yes, I have a chest freezer and the fridge freezer type. Usually all of Christmas Dinner makes it's way to the freezers and every year I forget until the phone call comes. Oh dear.
I need to meal plan for the week now, knowing I have quite a bit of freezer space to make...
Your toad in the hole sounds lovely with the extras. I love the idea of the roast Red pepper and onion with it.3 -
Hi guys
I’ve finished off the last of a bag of spuds and some carrots and parsnips to do roast veg with faggots tonight. Hopefully there will be enough veg left for brunch tomorrow. My half lamb arrived on Wednesday and it was a chunky one. Luckily I only needed to get bread out (which we have already used most of) to squeeze it in) I’ll probably keep the big leg for a lunch over Xmas. We’re having Xmas day at DS1s so I don’t need to buy all the normal stuff. DIL will let me know nearer the time what she wants us to bring. Last year it was the crackers and we always take a couple of bottles of wine anyway. It makes more sense us all going there cos DGD will want to play with her toys.
Anyway better go cos it’s covid and flu jab day. The bus is in a supermarket car park nearby so easy enough to get to.
Hugs everyone

Used a double portion of chick pea tikka from the freezer today, and took out some fish to defrost overnight. I think all that went in was a third of a chorizo.I think a bit of sunshine is good for frugal living. (Cranky40)

Today we’re having brunch of a couple of sausages, eggs and leftover roast veg from last night. Then chicken kiev and peas from the freezer and new potatoes that need using.
I’ve got out a nice piece of lamb breast out for tomorrow and hopefully there will be enough left over for Monday.

Burgers from the freezer defrosting and veggie burgers (I don't like beef burgers) are ready for tonight. Went food shopping yesterday because we had run out of veg and Sunday dinner things, shopping bill was reduced by around £30. A result! Chicken will do 3 of us for dinner tomorrow, and 2 of us for a few bowls of soup and a sandwich, and Monday night pasta/risotto.3

That's an amazing result, @Ellie79. Is this because of eating from the freezer?I think a bit of sunshine is good for frugal living. (Cranky40)

@Cherryfudge yes, it is! Very pleased. Had to go get some preprepared bits yesterday as I am loaded with cold and my OH cannot cook roasties and veg and get the timings right. I'll take that, it still keeps us below our weekly spend. Chicken dinner means soup for lunch (which I really need!) Followed by a pie (pastry out of freezer) with the leftovers and some frozen veg added to bulk it up. That'll do those two and I'll just have some more soup. Really not feeling like much else. Meal planned for the rest of the week and should be on target. Probably will run out of something because it is half term here and I have an 11 yo who grazes constantly. Went into the baking stores and made a lemon drizzle which may keep her at bay for a day or two!4

Hi guys
We are having the leftover lamb from yesterday with new potatoes, frozen veg and gravy tonight. I’m attempting to push my next big shop away as far as possible to allow the saved money to be spent of Xmas.

Home alone this week, so planning on just eating out of cupboard and freezers. Only shopping will be milk (for me) and fresh salad/veg for guinea pigs. Although if there any wild chard left on allotment and they will eat that, will be an almost zero spend. I am hoping to start on jam/chutney making from fruit in freezer, but my list of tasks at home this week is long, very longIt's good for the soul to walk with your soles on the soil.4
