@Cherryfudge my curried green lentil soup is based on this

and then adapted with whatever I have in so I rarely have leeks but often have celery and or onions and if there is a bit of broccoli or something left over I add that, but, I always add the carrots (chopped) and the lentils
I blitz it with a stick blender till smooth. Made it to mortgage free but what a muddle that became

I freeze a couple of dozen eggs individually for winter most years, @Cherryfudge, but one of the older hens kept laying a few eggs last year, and another restarted laying in early February. I can sell a few boxes of eggs to friends and the money goes into the chicken feed fund. They have good quality layers pellets and wild bird seed for their scatter corn.
Our egg supply reminds me of the story of the magic porridge pot as the egg trays are refilled daily. We used to keep colourful egg layers!

That carrot and lentil soup looks lovely and easy, I might give that a go too.
We're going away for half term at the end of next week so I need to use up everything that might go off before then. I've got lots of veg so I think there will be a lot of soup and curries coming up. Since it's Friday I'll probably be super lazy and give some instant spicy noodles a glow-up by stir-frying some veg and smoked tofu and throwing them on top. I'll do a proper fridge audit in the morning.

I used a grated apple in drop scones to eke out the last of the dried fruit.6

I used up a batch of mixed dried fruit to make a tea bread, which is doing us very nicely instead of cake. Bought another bag so I have it ready for Christmas cake.
DH has taken the rest of the chicken pieces out of the freezer to make a curry tomorrow, and I'm slowly making my way through a couple of bags of frozen fruit with my breakfast.I think a bit of sunshine is good for frugal living. (Cranky40)

Used 6 YS chicken breasts from the freezer up in a gorgeous chicken one-pot dish, which also finished the grated courgette from July 2020 😳 and an ood can of chopped tomatoes also went in there.
Ds1 brought home lots of unwaxed lemons and oranges from work, so DH made a huge lemon and orange cake to use some of them up.
I've also just cooked up the remaining half of a pack of chicken sausages and will eat those for lunch today and tomorrow.

I made soup yesterday with the end of a butternut squash, a leek and half a swede + garlic, ginger and chilli and it was delicious! It did lunch for yesterday and today.
This afternoon's job is going to be using up more veg so I think I'll do a Thai green curry with cauliflower, broccoli and carrots and add some smoked tofu for protein and then a beetroot Dal as I've got lots of beetroot that needs using.7 -
I managed to use up or freeze pretty much everything before I went on holiday so I'm feeling pretty happy. As well as the beetroot dal and Thai green curry I made a ton of cheese sauce to use up the rest of the milk and added some mascarpone and cheese leftover from making a cheesecake. I also stewed the rest of the fruit (a couple of pears, apples and a handful of blueberries) with some stem ginger and froze it so I'll have a nice topping for yoghurt when I get back. The rest of the veg like carrots, pumpkin and spuds should be fine until I return.
November is going to be use-it-up month Chez Tea so I'll be happy I've got a few easy meals in the freezer already.6
