In - Whoops againPopped to the shops for bread and milk and got reduced eggs. They are now in boiling to make a large jar of pickled eggs, which we love. I won't buy them as they are expensive for what they are but if I get cheap eggs this is where any spare go. Fruit and Veg box also been delivered so need to sort through that - there is loads though so guessing there will be carrots and swede being prepared for the freezer.

I boil the eggs and peel them, then boil the vinegar and put the eggs, spice, and vinegar into a jar and leave for as long as we canYou don't have to have pickling spice but I had some in so added it.

@Frugalista, i am going to attempt a recipe that requires selfraising wholemeal flour (only got plain) and polenta (yeah for Olio), if it works, i will post the link. An idea for not wasting the flour you bought by mistake.
Tonight will finish the poached chicken breasts defrosted from freezer with some allotment veg and pasta.
Out: lamb chops for sunday, early valentines' dinner, working monday.It's good for the soul to walk with your soles on the soil.4 -

Out - mincemeat ready for spag bol tomorrow
Work today has been awfulSome very, very sad news affecting everyone has been really hard. We have come home (was meant to be eating out) and ordered a Chinese then off to bed. The sad news also means I need to cover more hours so have gone from just a few hours to over full time for the foreseeable future - hopefully just 4/6 weeks - but it is what it is for now.
Determined not to let the extra work come over the meal planning so going to have to be mega organised. Will prep the spag bol for tomorrow and hubby can turn it on and sort the pasta for as I get homeSunday is really easy with pasties out of the freezer and into the oven so he can look after Sunday too now I am working.

Got some chicken thighs out of the freezer yesterday and chucked them in a big tin with some salad potatoes, a few cherry tomatoes, a green pepper, red and white onions, a lonely leek, the rest of a bulb of fennel and the last of the bag of carrots. Poured in some chicken stock and covered in foil and baked for about 45 minutes. Very tasty and the last most of the veg used up. Just 3 red peppers and a yellow pepper, some mushrooms and about 1/2 punnet of cherry tomatoes left in the fridge. Mushrooms and tomatoes will be used for weekend breakfast fry ups. Have got a pack of bacon out of the freezer for tomorrow and will get out some sausages for Sunday's breakfast.

So, the polenta and wholemeal loaf came out...ok? According to the picture it is a low, solid loaf. Very, very tasty, if a bit grainy. Maybe the wrong kind of polenta? Added 1/2tsp baking powder to the plain wholemeal flour. Valentine's dinner at home tonight includes:
Out: lamb chops, frozen allotment chard for an alternative to creamed spinach, allotment potatoes, cooked quinoa (mixed with fresh herbs, zest etc). Going to make quick rosemary crackers to go with cheese for dessert.
In: demerara sugar (yeah for the wanted section on Olio), to make clementine chutney with sometime next week.It's good for the soul to walk with your soles on the soil.4 -
In: whole chicken I will pressure cook for OH for roast today - rest will do other meals, stock to make soup, chicken breasts for freezer, veg, bacon, sausages (meat and veggie) and black pudding.
Out: root veg stew pack into the slow cooker with some cooked green lentils for veg stew for me. Will use this up over a few meals / freeze LOs.
Had a good root around in the freezer looking for hash browns and was amazed at what I found in there. Definitely need to eat out of the freezer for a while! Mr M delivery tonight but mostly cat food with a few fridge bits.2 -

A pack of mince and one of sausages out of the freezer, chopped up most of the remaining veg from the fridge, added some tinned tomatoes and beans from the larder, and I have a beef and veg chilli, and a sausage casserole simmering away on the hob. Trouble is, I got 2 flat and not very big items out of the freezer, plus a couple of oddments such as chillis, and will have enormous tubs to put back in there...... Does anyone else have this problem? How do you even empty a freezer, if you continually take out small things and put in big things instead?4

@DawnW i have found a similar problem. I try and store my bulky/large items on one shelf. But mostly i moved to using sealable bags or small tubs and store them stacked, find they defrost easier than larger containers too. It helps that there only 2 of us, so mainly store in portions of 1 or 2.
@joedenise, ms C told me last night i should make more curry, she loves the one's i have been making and am happy to have it at least twice a week! Compliments to the chef!It's good for the soul to walk with your soles on the soil.4
