When talk talk move over to digital will my additional extension sockets in the bedroom and living room still work?

No, unless you do a bit of wiring modifications. However it would really help a lot if suppliers started using the correct description for what they are providing so everyone was clear with what they are getting.
Do you know how TT are providing "digital" which suggest that your phone is being moved from the PSTN (Public Switched Telephone Network) where your phone is connected to the exchange or cabinet by copper wires to the incoming telephone line tp VoIP (Voice over IP) where the phone gets connected via your router or a VoIP adapter meaning that the phone wiring wont work anymore.
Is your service being transferred to a proper Optical connection (Fibre to the Home) rather than Fibre to the cabinet. ie are you getting a fibre connection directly into your house?
Generally you'll have to plug your phone directly into the router which means that none of the in house wiring will not work anymore unless some who knows what they are doing can rewire the extension sockets directly to the router. You will nave to ensure that the extension sockets are isolated from any external wiring.
