Avocado, mango and black bean salad. Bit of chlli, bit of onion and fresh coriander, bit of lime juice. Baby toms if you've got them.
My favourite and very speedy lunch of the moment.
(ETA for the money conscious, the advocados were free via the olio app and the mangos were yellow sticker.

I'm also a big fan of back beans and they go in my chilli with a tin of kidney beans and a tin of chick peas.
Another recipe I used to do was, a tin of beans (any works) drained and mixed with, chopped pepper, chopped spring onion, chilli flakes and grated cheese. Made into pasties with ready rolled puff pastry.1 -
