When testing the switch with the multi-meter where exactly am I putting the probes on the switch?
If you have to ask that question you really should seek professional help, i.e. get a sparky in.
The hood is unplugged & is disconnected completely, I just want to test the switch & to know where to exactly put the two probes on the switch control hardly worth getting a sparky out for such a minor task.

That's actually a very good question.

The switch is a multi-way device to enable you to select 'off' or a choice of speeds. The switch does not connect directly to the motor but via several terminals to an electronic control board which then applies variable power to the motor

Switch and control board can be tested but you would need to be confident that you know what you are doing and can work safely on a live circuit. In my experience it is likely that a component on the control board has failed.
I think I would agree with Le_Kirk's advice
