Dublin transfer / Ireland PLF

Flying Ryanair to Luxembourg via Dublin and have to self transfer in Dublin ie go through arrivals and then enter departures. Does the Irish PLF allow me to omit any address as I'm not staying anywhere? Also just realised I'll have my lateral flow test (for pre return journey) with me through security(x2) as I'll only have hand luggage, assume I'll have to open the kit and put the liquid in a plastic bag?
