So I tried it last night using @Mu22 wiring diagram and it didn't work.
Went through the god awful menu system, with no help from the manual, and found that my RS485 was set to 'battery'. Changed it to VPP and it worked immediately, so thanks @Mu22, you're a superstar!
Fitted the Growatt dongle back in the RS232 port and I now have both options available. I have no intention of looking at the shine app any time soon but it's nice to think I have a fall back option if I ever need it.
For reference, I used this adapter.

I cut a Cat6 cable from Virgin and used the two wires I needed into the adapter.
Now, I can continue configuring my Home Assistant (on another Pi) so I can make an in-home display. I love Solar Assistant but it's not very pretty!4 Kwp System, South Facing, 35 Degree Pitch, 16 x 250W Solarworld Panels, SMA Sunnyboy 3600 Inverter, Installed 02/09/14 in Sunny South Bedford - £5600

@waywardmike, No, it appears to have been the old cat 5 cable I had utilised, the adapter I had purchased (https://www.amazon.co.uk/gp/product/B01N3LM0PU/ref=ppx_yo_dt_b_asin_title_o05_s00?ie=UTF8&psc=1) is working fine, very happy to have both reporting options available. Hi everyone, I have just had 5kw of PV installed, along with a Growatt SPH inverter. As already discovered the RS485 pinout on Solar Assistants website doesn't appear to work. I emailed support and they provided a number of possible configurations.
Could one of you let me know what wiring has worked for you?
I will happily share the drawing that SA provided me (if it is deemed appropriate. I'm new here and don't want to overstep the mark)

As it's worked for three of us, probably time to make it public, this is the pinout we've used which was originally on the Solar Assistant website.
I found conflicting information on which was pin 1, but based on cutting down a network cable I found that white/blue was A and blue was B.
I hope it helps & don't forget to set RS485 to VPP in the inverter
