Easyjet Flight Voucher expires Jan 2022

Apologies if this has been asked a thousand times already but i've searched the forum and can't quite see the answer.

I currently have a flight voucher for £1500 which expires on January 7th. I'm looking to fly the family to Kos in October 2022, so I'm hoping Easyjet release the flights but not sure they will due to the current covid restrictions and chaos.

Firstly, has anyone managed to extend their voucher?
If they don't release the next batch of flights, is my only option to book a flight for the full value and then move it once the flights are released.
