Amex Rewards - PayPal Friends & Family transactions?

OH has just taken out an Amex Rewards credit card and was approved with a generous limit.
Our typical joint day to day expenditure totals about £7,500 per year (fuel, groceries, other amenities) so it's going to be quite slow going building up rewards, but it's better than a kick in the teeth.
What other methods have people used to maximise their rewards? Don't want to do anything Amex would frown upon but any useful pointers would be greatly appreciated 🙂

Any other bills that accept card payments, for example I pay my EE bill using my Amex, as I have no need for the direct debt.1

If you are coming up to a milestone and need to tip over the threshold to get the bonus reward (e.g. I have to spend 3k in 3 months to get the sign up bonus), you can buy supermarket gift cards on your Amex. Some councils allow you to pay for your whole CT by credit card. Car tax accepts Amex. DVLA doesn't accept Amex, does it?
Yes the DVLA accepts Amex, its in the drop down list when you select card type online. They did take it away for about 18 months, but it came back this year, I taxed my car using Amex this month.2 -

Amex have special offers within the app which offer additional cashback. The most popular of these is Shop Small which happens once or twice a year. Basically, when you spend £10 in small shops which accept Amex, you get £5 bonus cashback.
A lot of the offers are for high end hotels etc, but some of them can be quite good. For example, right now I get 10% cashback from Uber Eats, 7% cashback at Superdry, 10% cashback when you spend over £30 at Morrisons, and 10% off at Byron Burger.1
