Gmail is changing my words

I type an email "Hi Beth" and gmail is changing it to "Hi What". I can't get gmail to stop doing this.
I have smart compose turned off.
I want to try changing the gmail view to basic html view to stop it showing all the gimmicks how do I change it to basic view only? I used to have it on basic view many years ago when my computer could not cope with all the gimmicks gmail offered a basic no gimmick view.
EDIT gremlins at play me thinks. It is not doing it now .

Google is making this nigh on impossible to find. Nothing on the standard view to switch to HTML view. Nothing in settings.
I found this link by searching online

But I still cannot make it save it as my default preference view. The HTML is a much nicer view.0 -

Probably not what the issue is but beth is Welsh for what.2
